A perfect side dish for Baked Ham or Roast Pork...
1/2 Lb. - Frozen baby Lima beans
1 Lb. - Bag Frozen Sweet Corn
1/4 Lb. - Bacon
1 Tsp. - Crushed Red Peppers
1/2 - Small Onion (Minced)
2 Cloves - Fresh Garlic (Chopped Fine)
2 Cups - Milk
Salt and Pepper to taste.
Parsley (Garnish)
Heat Medium size Sauce Pan (4 Qt.) over medium high heat to start.

Dice the Bacon and add to sauce pan, reduce heat and stir constantly until bacon is crispy and all fat is rendered.

To the hot fat add Minced Onion and Chopped Garlic, Sautee quickly... (Do not brown).

Add Lima Beans, cook until Limas begin to brown slightly.

Add Corn, stir, and bring pan back to a gentle sizzle.

Add Crushed Red Peppers, milk, salt (a pinch or two) and pepper (liberal).

When the mixture begins to steam, reduce heat to a low simmer, cover for 20 minutes (until Limas are soft.)

Turn off heat, let stand 10 minutes, spoon into bowls, garnish and serve.
