SUMMER SQUASH CASSEROLE

RECIPE INGREDIENTS
2 lbs. yellow summer squash, sliced (6 cups)
1 med. onion, chopped & sautéed in a little margarine
1 can condensed cream of chicken soup
1 cup dairy sour cream
1 cup shredded carrot
1/2  8-oz. pkg. herb-stuffing mix
1/2 cup butter or margarine, melted
DIRECTIONS
In saucepan, cook sliced squash in boiling salted water for 5 minutes; drain. Combine chicken soup and sour cream. Stir in shredded carrot. Fold in drained squash, onion (which has been sautéed), stuffing mix, butter or margarine.


Pour into casserole and bake in 350 deg. oven for


25 to 30 minutes. Makes 6 servings.


Note: Mix melted butter or margarine with stuffing mix before folding into vegetables.
