Quick and easy dish that seems like you slaved all day!
2 jars sun dried tomato alfredo spaghetti sauce (creamy tomato style)
4 boneless chicken breasts
1/2 cup cooking sherry
1 cup sliced mushrooms
1/2 cup sliced red onions
1/3 cup olive oil
milled black pepper to taste
1 tsp fresh basil finely chopped plus for garnish or
Parsley to garnish
Egg noodles or rice for 4
Serves 4.

Saute onions and mushrooms in olive oil. Strain and reserve. Using kitchen mallet, flatten chicken breasts to aprox. 1/2 inch thick. Saute breasts in olive oil until browned both sides. Decant sauce into mixing bowl and add sherry, mushrooms, onions and seasonings. Stir to blend and pour over chicken in skillet. Simmer covered over med-low heat for 30 mins or until chicken is tender but cooked through. Let stand 5 minutes or so. Serve over noodles or rice with basil or parsley garnish. Enjoy!
