Sunrise Breakfast Burrito

  • 15 eggs, whole
  • Salt and pepper to taste
  • 15 fully-cooked microwavable bacon, heated, chopped small
  • 5 tablespoons cheddar cheese, grated
  • 5 Mission Medium/Soft Taco Flour Tortillas
  • 2 green onions, chopped
  • 1 red bell pepper, chopped


In a small bowl; whisk the eggs with salt & pepper (optional) to evenly combine.

To make 1 burrito: heat nonstick sauté pan over high heat.

Spray pan with vegetable spray; add the equivalent of 3 whole eggs to the pan. Soft scramble the eggs, taking approximately 30-45 seconds.

Add 2 tablespoons chopped bacon (equals 3 strips chopped) and 1 tablespoon grated cheddar cheese to the eggs and stir to combine, melting the cheese.

Spoon the hot egg mixture into the center of a warmed tortilla and roll burrito-style and serve. Repeat for the remaining 3 tortillas.

Garnish with chopped green onion and red bell pepper.
