This colorful, easy-to-prepare salad is healthy being loaded with vitamins and antioxidants yet is SO delicious. The flavor combination is unusual but wonderfully memorable.
2 small heads Boston lettuce, leaves separated
1 small (about 5 oz.) package baby spinach
1 teaspoon grated fresh orange zest
½ cup sliced pickled beets
1 cup grapefruit sections, fresh or canned
2 avocados, peeled and sliced (sprinkle with fruit fresh or lemon juice)
1/4 cup sliced almonds
1/3 cup sweetened dried blueberries
1 teaspoon poppy seeds
1 small bottle honey-Dijon mustard dressing
Divide and arrange greens equally on individual salad plates. Sprinkle with orange zest. Arrange beets, grapefruit and avocados on greens as desired. Sprinkle with almonds, blueberries, then poppy seeds. Lightly drizzle with desired amount of salad dressing.
