A light, healthy start to the day, this homemade granola makes use of a variety of fruits and nuts according to what is readily available.
- 1 tablespoon raisins
- 2/3 cup thick plain yogurt
- 1 tablespoon honey
- 1/4 cup rolled oats
- 2 tablespoons almonds or hazelnuts, toasted, skinned and chopped
- 1 passionfruit
- 1 small mango, cubed, or 1 banana, sliced, reserving a few pieces for decoration
- A few extra toasted almonds, to garnish
Place the raisins in a small bowl and pour in boiling water to cover. Set aside while preparing the muesli.
In a small bowl, stir the yogurt, honey, rolled oats and nuts together.
With a small sharp knife, halve the passionfruit. Using a teaspoon, scoop out the seeds and pulp and add to the yogurt mixture. Drain the raisins and add to the mixture, then add the mango or banana. Mix gently until just combined.
Spoon into a bowl and decorate with the reserved fruit and the almonds.
Tip: If you like a sweeter muesli, drizzle with a little extra honey or demerara sugar before eating. Fresh seasonal fruit such as strawberries, peaches, pears or any others of your choice can also be used.
