1              pound  lean ground beef -- browned & cooled
1          1 oz pkg.  Taco mix
1              large  head of lettuce -- in bite size pieces
2              large  tomatoes -- seeded and chopped
8             ounces  extra sharp cheddar cheese -- grated
1/2   10.5 oz pkg  Fritos Original Corn Chips -- crumbled
1           16 ouces  Kraft - Catalina dressing -- refrigerated
1              large  avocado (optional) -- cut into cubes
DIRECTIONS
Brown ground beef. Drain off grease and refrigerate. Once cold, mix ground beef and stir the dry taco mix into meat, refrigerate again. Refrigerate the bottle of Kraft Catalina dressing. This can be done a day in advance.


Clean lettuce, chop into bite size pieces. Refrigerate in plastic bag.


Cut tomatoes in half and run your finger into seeded area to remove seeds and juicy pulp. Discard the seeds and juice. Dice tomato into bite size pieces.


Grate the cheese.


Crumble about 1/2 bag of Fritos (or up to 3/4 bag), depending on how crunchy you want the salad.


TO ASSEMBLE: Place the lettuce on serving platter or in large bowl. Spread meat mixture over lettuce,top with tomatoes, grated cheddar, crumbled Fritos and pour most of the bottle of Catalina dressing over all. Mix well. Top with chopped avacado (optional garnish).

NOTES : You do not follow taco mix directions to make taco mixture. The taco mix gets mixed, dry, into the ground beef which was cooked, drained of grease and refrigerated.
