You could add about a half cup of wine or dry sherry to the poaching liquid or to the microwave dish when cooking the chicken to add flavor and help keep the meat moist.
- 2 cups shredded cooked chicken, warmed
- 1 cup packaged crisp chow mein noodles
- 1/4 cup thinly sliced green onions
- 1/4 cup soy sauce
- 2 tablespoons toasted sesame oil
- 2 tablespoons rice vinegar
- 2 tablespoons water
- 2 teaspoons sugar
- 2 teaspoons grated fresh ginger root
- 1 small red or green jalapeño pepper, seeded and finely chopped (1 tablespoon)
- 4 cups mixed fresh salad greens
In a large mixing bowl combine the chicken, chow mein noodles and green onions.
In a small saucepan stir together soy sauce, sesame oil, vinegar, water, sugar, gingerroot and jalapeño pepper. Bring to a boil, stirring to dissolve the sugar. Remove from heat and pour over the chicken mixture. Toss to mix. Serve atop mixed salad greens.
