Add capers and pickles to mayonnaise for a sauce that teams perfectly with deep-fried fish.
- 1 tablespoon drained capers, finely chopped
- 3 tablespoons finely chopped dill or sweet pickles
- 1 cup homemade or good-quality commercial mayonnaise
- 1 tablespoon chopped fresh parsley, or to taste
In a small bowl, mix the capers and pickles with the
mayonnaise. Add the parsley to taste.
Serve the sauce immediately or cover with
plastic wrap and chill in the refrigerator for 30 minutes
before serving. Serve with broiled or fried fish.
Tip: You could try adding lemon juice, finely diced shallot or chopped chives to taste. <B>Serving Size = 2 tablespoons</b>
