Teri's Grilled Corn and Black Bean Salad

RECIPE INGREDIENTS
2 ears corn on the cob, cleaned, grilled, corn removed
1 can Black Beans, rinsed and drained
1 rib celery, diced
2 cloves garlic, sliced thin
1/2 small red or sweet vidalia onion, diced
2 Anaheim peppers, grilled, skin and seeds removed, diced
1-2 tomatoes, diced
1-2 tbsp freshly chopped cilantro and Italian parsley
1 freshly squeezed lime
A splash of Spectrum Olive Oil
1/2 tsp smoked paprika
Sea salt and pepper, to taste
DIRECTIONS
In a salad bowl, mix all ingredients until incorporated. Chill and serve.
