Tex-Mex Pork and Potatoes

This is a great recipe for inexpensive entertaining! Have tomato salsa and sour cream in bowls on the table for condiments. Serve with a fruit salad, unsweetened cornbread, bottles of chilled full-bodied beer or a robust red wine.
RECIPE INGREDIENTS
olive oil cooking spray
1 bag Simply Potatoes (unseasoned)
1 purple onion, sliced into thin rings
1 cup sliced green olives with pimentos (optional)
1 1b. bag shredded cheddar cheese
3 packages Taco seasoning mix (regular)
2 cups water
8 thin sliced, boneless pork chops
DIRECTIONS
Preheat oven to 350 degrees.


Spray bottom and sides of oval or rectangular casserole dish with olive oil cooking spray.


Spread Simply Potatoes in even layer over bottom of dish.


Place onion slices evenly over potatoes.


Place 1/2 cup of olives over onions.


Place 1/2 pound of cheese over olives.


Brown pork chops in cooking spray in skillet about 2 minutes per side. Do not overcook. Set skillet aside.


Place pork chops in one layer over cheese, overlapping slightly, completely covering the casserole surface.


Place remaining 1/2 cup of cheese over pork chops.


Place remaining 1/2 cup of olives over cheese.


Pour 2 cups water into skillet in which pork chops were browned.


Add 3 packages of Taco seasoning mix.


Bring to a boil, scraping bottom and stirring, and allow mixture to simmer about 5 minutes.


Pour liquid mixture over entire casserole.


Bake covered with casserole lid or alumnium foil in 350 degree oven for 45 to 60 minutes.


Allow casserole to stand for 5-10 minutes.
