Thanksgiving Anytime Turkey Meatloaf

Enjoy Thanksgiving dinner anytime without the big bird and all the fuss!
RECIPE INGREDIENTS
1 Tbsp olive oil
1/2 medium onion, diced
2 stalks celery, diced
1/2 cup dried cranberries
1 1/2 lbs ground turkey
1 tsp salt
1/4 tsp black pepper
1/2 tsp dried sage
2 eggs
1/2 cup seasoned breadcrumbs
1 can organic whole berry cranberry sauce (no HFCS)
DIRECTIONS
Preheat oven to 375. On medium high heat, saute onion and celery in oil in non-stick pan until soft. Turn down heat to medium low and add dried cranberries. Cook another minute. In large mixing bowl combine turkey, salt, pepper, sage, eggs, and breadcrumbs. Mix in the onions, celery and cranberries. Transfer meatloaf mixture to a loaf pan and top with half the can of cranberry sauce. Cover and bake for 1 hour or until meat thermometer reads 165 degrees. Convection ovens will take about 45 minutes. Serve with the remaining cranberry sauce on the side and mashed potatoes.
