'The BEST Potato Salad' Or so i've been told ALOT!

My MOM'S made MY WAY!
3 lbs Small Red Potatoes-skin on or off.After cooking,cool just enough so you can handle them and peel OR NOT! I peel some but not all.
2 or 3 stalks of celery,with alot of leaves-chopped how you like
1 med oinion chopped
celery seed to taste
Dry mustard to taste-at least one tbls(I use 1 1/2 tbls)
1/4 or more of Apple Cider Vinegar
McCormicks salt free ALL PURPOSE SEASONING-1 tbls or to taste--Sea Salt,Ground Black Pepper to taste.
6 Hard Boiled Eggs,or what ever you want.
HELMANS MAYO ONLY!!! As much as you like.
Mix all the ingredients ezcept the eggs and mayo while the Potatoes are still warm,let sit for a at seast an hour,32 or 3 is better. Then cut Eggs lenght wise in 4 pieces and then chop into 1/4 inch pieces and carefully

fold into potatoes. Then add HELMAMS,as much as you like.

Then I add Fresh chopped Italian Parsley or CILANTRO.

I like the flavor of the Cilantro but some people don't.

What ever you like! Then TASTE AND ADJUST. I have this so down pat now that I never have to add.Been making this for YEARS!

A CHEF told me that it was the best he ever had.Even had me make it for him for his own parties and private parties he catered!
