Three Bean Cincinnati Chili

RECIPE INGREDIENTS
1 pound ground beef
1 pound of sweet Italian sausage
1/3 cup of dry black beans
1/3 cup of dry red beans
1/3 cup of dry pinto beans
1 tablespoon of dry minced onion
2 tablespoons of fresh minced garlic or 1 whole fresh garlic minced
3 tablespoons of brown sugar
1 packet of taco mix
1 tablespoon of chili powder
1 teaspoon of cinnamon
1/2 teaspoon of allspice
1/2-1 teaspoon of cumin
1 15-16 ounce can of diced tomatoes
1/2 cup of diced green pepper
1 28 ounce can of crushed tomatoes
1 to 2 “dashes” of red pepper flakes
1 cup of grated sharp cheddar cheese
1/2 pound of spaghetti noodles
DIRECTIONS
Place the 1/3cups of beans in 2 cups of water and bring to a boil; add more water as necessary and cook until firm, but not quite done. Drain.


Brown ground beef and sausage in skillet, add taco seasoning mix and drain. Saute garlic, minced onions and green peppers. In a large stew pot, combine beef, beans, and sauteed vegetables. Add chili powder, allspice, brown sugar, cinnamon, and stir. Add diced tomatoes, crushed tomatoes and 1/3 cup of grated cheddar cheese and a dash or two of red pepper flakes.


Mixing thoroughly, reduce to simmer. Walk away and stir every 20 minutes or so until thickened. Simmer for at least one hour and up to three hours for stronger flavor covered, ensuring beans are well done. Add 1/3 more cup of grated cheddar cheese and stir melting cheese.


Cook 1/2 pound package of medium spaghetti. and serve chili over spaghetti with balance of grated cheddar cheese to top. Add a fresh salad and garlic bread to complete the meal.
