Three Cheese Baked Mostaccioli

This easy dish uses many of the ingredients you have in your pantry.
1# (16 oz.) Mostaccioli pasta
1 # bulk Italian sausage
2 (26 oz.) jars spaghetti sauce or homemade marinara sauce
1 (14.5 oz.) can of diced(drained)tomatoes (w/garlic & herbs)
4 cups shredded mozarella cheese
1 cup shredded cheddar cheese
3/4 cup grated Parmesan cheese
1/2 cup chopped black olives
3 Tablespoons chopped fresh flat-leaf Italian parsley
Preheat oven to 350 degrees. Prepare mostaccioli as package directs. Brown the sausage and drain off the fat. In a large bowl, combine the drained mostaccioli, sausage, pasta sauce, tomatoes, olives and half of both the mozarella and cheddar cheeses, mix well. Pour the mixture in a greased 9"x13" baking dish; top with the remainder of mozarella and cheddar chesses; cover with foil. Bake 35 minutes or until hot and bubbly. Raise the oven temperature to 375 degrees; uncover the dish and top with parmesan cheese. Bake another 10 minutes. Take the dish out of the oven garnishing with the chopped parsley just before serving. Serves 12.

Dewey Defeats Truman
