Three Cheese Zucchini Bake

This recipe was created because of the abundance of zucchini in our garden this time of year. I let my zucchini get 10 to 15 inches long so I will have a nice slice to bread and fry. I then layer it with cheeses and a marinara sauce. Great in a sandwich.
RECIPE INGREDIENTS
4 Cups Skin on Sliced Zucchini
5 Cups Marinara Sauce Homemade or Bottled
2 Cup Mozzarella Cheese Grated
1 Cup Colby Cheese Grated
2 Cup Parmesan Cheese
2 tsp. Sweet Basil Dried or Fresh Chopped
1 tsp. black pepper
1/2 tsp. salt
2 Tb. Poppy Seeds Black
4 Eggs Beaten
2 C. Flour
Light Olive Oil for frying
DIRECTIONS
I let my zucchini in my garden get to about 12 to 15 inches long. I slice them about 1/4 to 1/2 inch thick. I dip all the slices flour and then in the egg mixture, then sprinkle the batch w/salt, pepper, poppy seeds, 1/4 C. of Parmesan Cheese. I then dip them in the flour again. Meanwhile I pre-heat my flat griddle to medium heat w/olive oil. I panfry each zucchini slice until golden brown, turn once and drain well.I add more olive oil as needed for the pan frying.


I them put one layer of zucchini in a 13x9 cake pan and add sauce, parmesan, mozzarella and colby cheese. I keep doing this until pan is filled, alternating with the sauce, cheese and zucchini. I then cover with foil and bake in preheated 375 degree oven for 20 minutes. I serve with Hard Rolls, French Bread or Garlic Bread. My family loves to eat this cold also as a sandwich. It is great for re-heating in microwave.
