A spicy peanut and molasses cookie. Relatives who visited us in Maine were always treated to these fabulous cookies and coffee. They still ask for the recipe and reminisce about my Mom’s delicious cooking.
3 eggs
2 cups molasses
4 cups of all-purpose flour (separated)
2 teaspoons baking powder
1 teaspoon ground cloves
4 teaspoons ground cinnamon
1 teaspoon black pepper
2 cups peanuts
1. Measure 2 cups flour and baking powder in a bowl - sifting together. Set aside.

2. Pulse eggs in food processor until beaten.

3. Add molasses. Pulse one minute on and off.

4. Add spices: cloves, cinnamon & black pepper.

Pulse until mixed-in.

5. Add flour & baking powder to egg mixture.

Pulse until mixed (about 2 minutes off and on).

6. Add additional flour until a stiff dough is

formed, pulsing on and off (until dough is of

play-dough consistency).

7. Remove from the food processor.

8. Add peanuts and mix in with hands.

9. Divide into 2 balls. Form into two logs.Cover

with plastic wrap and chill (a couple hours OK

or overnight).

10. Divide each roll into 3 logs(Form or roll-out

on a floured surface).

11. Place 6 flattened logs (about 12" X 3") onto

greased cookie sheets.

12. Bake

375 o F 10-12 minutes.

13. Cool 5 minutes.

14. Cut (at a slant) into 1 inche slices.
