Tortellini and Meatball Soup

This is my go to, in a pinch recipe for unexpected company or a rushed evening. So easy my 4 year old makes it!
9 oz frozen cheese tortellini
12 oz bag of frozen mirepoix (diced carrots, celery, onion)
15oz can sweet corn (or 2 cups frozen corn)
1 lb frozen meatballs
4 qts chicken broth
1 tbsp Italian seasoning
1 tbsp minced garlic
2 tbsp parsley
salt & pepper to taste
Bring chicken broth to boil in large stock pot (at least 6 quart size). Add meatballs and tortellini, simmer for 9-11 min. At the 5 minute point, add remaining ingredients, return to simmer for remaining 4-6 minutes. Great with a crusty bread.

-If your family is eating in stages, add meatballs, cooking 3 minutes before adding tortellini, cooking an additional 5-7 minutes. Undercook tortellini and add remaining ingredients at the same time. Keep soup warm, or refrigerate and warm up individual bowls.

-Can use 1 small onion, 2 carrots & 2 stalks celery diced in place of bag of frozen mirepoix.
