Tortellini Soup

A friend of mine brought some tortellini soup in to work one day to share. It had cream in and was pretty good, but I wanted a little more flavor in mine so improvised a little!
1lb Italian sweet sausage
Fresh Basil, 8-10 large leaves, chopped finely
Chicken broth (about 8-12 cups)
Freshly ground black pepper
Baby spinach – 6-8 oz
Cheese-filled Tortellini (20 oz package)
Brown sausage in large sauce pan. While browning, crumble into small pea sized pieces. Drain fat.

Add chicken broth. The amount of liquid you use depends on how “dense” you want your final product. You may want to start with 8 cups and add more later. Add basil to broth and allow to simmer for at least 15 minutes. While simmering, cook tortellini in boiling salted water in separate pan. You will want to undercook just a little as the tortellini will finish cooking in the broth.

When tortellini is ready, add to broth, then add baby spinach and allow to simmer until spinach is just barely wilted.

Serve with freshly shaved Parmigiano-Reggiano.
