Tortilla Quiche Appetizers

These are great for parties because you can get them ready ahead of time and bake them right before serving. And everyone just loves them - I usually make a double batch because they go so fast.
RECIPE INGREDIENTS
4 corn tortillas, 6” diameter
1/4 cup diced ham
1/2 cup shredded Monterey Jack cheese, divided use
6 large eggs
1 cup Daisy Sour Cream, divided use
2 tablespoons chopped fresh cilantro
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup salsa
Nonstick cooking spray
DIRECTIONS
Preheat oven to 350° F. Prepare 4 individual, shallow baking dishes (about 5 ounce capacity) with nonstick cooking spray.


Soften each tortilla by microwaving for 10 seconds at full power. Press each tortilla into a baking dish, flattening the bottom and pleating the sides as needed. Use kitchen shears to trim any edges that overhang the dish (they will get tough during baking). Sprinkle ham and 1/4 cup cheese evenly among the 4 dishes.


In medium bowl, whisk together eggs, 1/2 cup Daisy Sour Cream, cilantro, salt and pepper. Pour an equal amount into each dish. Sprinkle remaining 1/4 cup cheese evenly over the egg mixture. Place dishes on baking sheet and bake in preheated oven for 25-30 minutes. Turn on broiler for 2-3 minutes to puff and lightly brown the casseroles.


Allow the quiches to cool for 5 minutes; carefully remove from baking dishes. Cut each mini-quiche into 4 pieces. Dollop a spoonful of the remaining sour cream and a spoonful of salsa on each piece.
