Trail Mix Cookies

Makes about 48 cookies, 2 per serving

If desired, substitute 2 1/2 cups of prepared trail mix containing fruit, nuts, and coconut for the dried fruits, coconut, and chopped nuts called for in this recipe. Be sure to break up any banana chips and whole nuts, and snip any other large pieces of dried fruit into bits.


  • 3/4 cup butter or margarine, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 2 eggs
  • 1 cup mashed bananas (3 medium)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup mixed dried fruit pieces
  • 3/4 cup coconut
  • 3/4 cup chopped peanuts, walnuts or pecans


In a large mixing bowl, beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add the granulated sugar, brown sugar, baking powder, baking soda and allspice; beat till combined. Beat in the eggs, mashed bananas and vanilla. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon. Stir in the oats, dried fruit, coconut and nuts.

Drop the dough by rounded tablespoons onto ungreased cookie sheets, 2 inches apart. Bake in a preheated 375 degrees F oven for 10 to 12 minutes, or till golden brown. Remove cookies and cool on wire racks.
