T's Corn Souffle

This is a great side dish for any dinner party or holiday, with rave reviews each time. Easy!
1 can kernel corn (regular size)
1 can creamed corn (regular size)
1 small can (5.5 oz) evaporated milk
3/4 cup Italian seasoned breadcrumbs
1/4 cup chopped onion
2 T. chopped pimentos
3/4 cup shredded cheddar cheese
2 eggs, beaten
1/2 t. salt
1/4 t. pepper
Cooking spray
In mixing bowl, combine corn, evaporated milk, onion, pimentos, cheese, salt, pepper and breadcrumbs (reserve 2 T. for topping). Fold in beaten eggs, mix well. Spray a round souffle or casserole dish with cooking spray, pour corn mixture into dish. Sprinkle reserved breadcrumbs on top. Refrigerate for 6-8 hours or overnight, then bake at 350 for 45 minutes or until bubbly.
