Vegan Corn Chowder

Have a nice warm, hearty corn chowder, to wind down your day.
1 1/2 oz. Onions, small dice
1 1/2 oz. Celery, small dice
1 1/2 oz. Carrots, small dice
16 oz. Vegetable stock
1 lb. Corn
1 lb. Potatoes, medium dice
4 oz. Soy milk
Salt and Pepper to taste
1. Add onions, celery, and carrots until softened.

2. Add stock, stir until well combined, bring to a simmer and cook 30 minutes.

3. Add 3/4 of the corn to the mixture and cook for 15 minutes. Puree mixture.

4. Add potatoes and let simmer for 10 minutes. Add remaining corn and the soy milk.

5. Let simmer for 10 minutes.

6. Season with Salt and Pepper and it is ready to serve.

What do you add the vegatables to in step one ?
I think this recipe is missing something - like olive oil - to add the onion, celery and carrot to - - to make them soften - see step one in the directions
