vegetable omelet

an easy to prepare brunch can be serve with a sliced of bread or crackers. I love eating it with bread and sipping a cup of coffee. One serving is not enough and you will ask for more.
RECIPE INGREDIENTS
1cup cubes processed cheese
1table spoon chopped garlic
1/2cup thinly sliced leeks
1/2cup thinly sliced celery stalks
1/2cup thinly sliced beans
1/2cup julienne sliced carrots
1/2cup thinly sliced button mushroom
4 medium size eggs - whisk with a pinch of salt and 1/4cup fresh milk
salt and pepper to taste
1 teaspoon of sugar
2 tablespoon olive oil for cooking
finely chopped parsley (optional)
DIRECTIONS
wash and drain well all the vegatable separately


in a skillet brown the garlic in olive oil


adjust fire to low then


add the cheese and sugar, stir with the garlic


in order put the vegatable on top: carrots, beans, celery, mushroom and leeks.


do not cover and simmer in low fire for about 5 minutes


(dont let the vegetable overcook)


then stir well season with salt and pepper


spread the vegetable in the skillet


adjust fire to medium-high heat


pour over the egg mixture let it flow freely to the mixed vegatable then lift portion of mixture to allow the uncooked egg to settle underneath


when most of the egg is cooked turn off fire


served with sprinkled finely chopped parseley
