You will never miss the meat in this casserole. You can use your family's favorite fresh or frozen vegetables. This was a hit with entire family even grandchildren wanted more.
1 large bag frozen hash brown potatoes
1 red pepper sliced
1 yellow pepper sliced
1 green pepper sliced
1 large yellow onion sliced
1 zucchini sliced
1 carton fresh sliced mushrooms
1 package stuffing mix
2 cups shredded cheddar cheese
2 T lemon juice
2 T oil (veg. or olive)
2 cloves garlic
salt & pepper to taste
1. Mix stuffing mix with water and set aside.

2. Put hash brown potatoes in large cake pan (I use glass 13x15).

3. Heat oil in large skillet add vegetables, garlic, salt & pepper and lemon juice. Cook over medium heat till tender.

4. Spread vegetables over potatoes.

5. Sprinkle stuffing mixture over vegetables and cover with foil.

6. Bake 45 Min's at 350 degrees.

7. Remove foil and add cheese. Put back in oven for 15 Min's or until cheese is melted.

question rather than review
how much water is mixed in with the stuffing mixture??? there is no amount listed - just "water". This could make or break this recipe as too much would be awful as would not enough.
