Vegetarian Living: Baked Cabbage Casserole

A quick and tasty dish, that an entire family can enjoy. This is a spicy variation. If your spice levels are low, just reduce the amounts of green chillies and pepper.
RECIPE INGREDIENTS
4 cups shredded cabbage
2 potatoes
3-4 green chillies
1/2 cup thinly sliced red onions
2 tbsp grated ginger
2 cups bread crumbs
1 cup shredded cheese
1 tbsp white/black ground pepper.
1 cup half cooked and blanched pasta (optional)
salt (as per taste)
1 tbsp Italian spice mix.
DIRECTIONS
Microwave/boil the potato, and mash it well.


Meanwhile, saute the onions, green chillies, ginger and red onions till its well browned


Mix in the mashed potatoes, and fry for a few minutes.


Take out the fried mix and add 1/2 cup of the cheese and 1/2 cup of the bead crumbs, ground pepper, pasta (if included) and mix well.


Grease a baking pan.


Make layers of the fried mix, and on top of each layer sprinkle bread crumbs and cheese evenly.


When all layers done add another thick layer of bread crumbs, Italian spice mix and cheese.


Bake at 400 degrees for 20 minutes


When done, take out and let cool for a few minutes.
