RECIPE INGREDIENTS
1 ONION CHOPPED
4 CLOVES MINCED GARLIC
2 t OLIVE OIL
1 28 OZ. CAN PUREED TOMATOES
5 T CHILI POWDER (TO TASTE)
1 T GROUND CUMIN
5 t BROWN SUGAR
1/2 t CORIANDER
1/4 t GROUND ALLSPICE
1 T OREGANO
2 15 OZ. CAN KIDNEY BEANS
CHOPPED JALAPENO PEPPERS (OPT.)
1 DICED BELL PEPPER (ANY COLOR)
2 CARROTS CHOPPED
2 STALKS CELERY CHOPPED
1 1/2 C CORN KERNELS (FRESH OR FROZEN)
1 4 OZ. CAN DICED CHILES
DIRECTIONS
1. IN A LARGE DEEP SKILLET OR SAUCEPAN, SAUTÉ THE ONION AND GARLIC IN THE OIL UNTIL TRANSLUCENT.


2. ADD THE PUREED TOMATOES AND ALL OF THE SEASONINGS.


3. HEAT THE MIXTURE UNTIL BUBBLY. REDUCE THE HEAT AND COVER THE PAN AND SIMMER FOR ABOUT A HALF HOUR.


4. ADD THE VEGGIES AND ANY OTHER INGREDIENTS. SIMMER FOR 20-30 MINUTES.


CHANGES: GO CRAZY!!! USE ANY COMBINATION OF VEGETABLES AND TYPES OF BEANS. MAKE IT AS HOT OR AS MILD AS YOU LIKE BY ADJUSTING THE CHILI POWDER, JALAPENOS, AND CAYENNE PEPPER.
