Everyone loves this dish!! It can be used for a cookout or for a side dish at a meal. Because of the cornbread it can substitute for any bread you might serve while it also has corn and onion for a vegetable dish.
RECIPE INGREDIENTS
1 box Jiffy cornbread mix
2 Vidalia onions, sliced in large rounds and sauteed in butter
8 oz sour cream
2 cups fresh or frozen corn
1 cup mayonnaise
several drops Tabasco
1 cup grated cheese (cheddar or mozzarella)
DIRECTIONS
Mix Jiffy cornbread according to directions on box. Spread in 13 x 9 x 2 dish. Add thick layers of onion (or to your own taste). Separately, mix other ingredients except cheese and spread on top. Bake at 350 degs. for 40 minutes. Add cheese 5 minutes before baking time is done.
