Watermelon Bacon Wraps

This recipe is so simple, yet I am amazed at how people just go crazy over it!
1 lb. Bacon (Maple flavored is nice with this.)
2 to 3 jars of "Old South" Sweet-pickled Watermelon Rind
Tooth picks
A foil-lined cookie sheet. (Makes clean up easier!)
Heat oven to 350

Cut the whole lb. of bacon in half.

Drain the watermelon rinds and cut the really big pieces in half.The pieces should be about an inch and an inch and a 1/2.

Some pieces will be thin, in that case you can use 2 of them .

Taking 1 of the halved slices of bacon and a piece of rind, wrap the bacon around the rind and secure it with a toothpick, making sure the cut end of the bacon is down when you put it on the cookie sheet. They should be about an inch apart.

Put them in the oven for about 30 to 35 min.

Keep an eye on them, they should be golden brown and cooked through.

Move to a platter and serve warm, not hot!
