This is the absolute 'go-to' recipe for a family dinner or company. Serve with a green salad and french bread for a complete meal. Leftovers (if there are any!) taste even better the next day. Always gets rave reviews every time I serve it!
1 tablespoon olive oil
3/4 pound boneless skinless chicken breasts, cubed
1/2 large onion, chopped
2 cloves garlic, minced
2 cups chicken broth
2 cans great northern beans, rinsed and drained
1 teaspoon dry mustard
1 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon ground black pepper
Shredded sharp cheddar cheese
Sour cream (optional)
4 cups corn tortilla chips (optional)
White Chicken Chili Recipe at
Saute chicken in oil until no longer pink.

Remove chicken and set aside.

Saute onion and garlic in oil in same skillet until tender.

Combine all ingredients except cheese, sour cream, and chips.

Cover; cook on medium heat for 30 minutes.

Stir occasionally.

Serve in individual bowls. (If using tortilla chips, crumble them into bowl first).

Sprinkle with cheese and top with sour cream.
