White Chili with Chicken

2 Tablespoons olive oil
1 Large Onion, diced
1 Jalapeno, seeded, deveined and minced
2 Cloves Garlic, minced
1 1/2 Cups Chicken or Vegetable Broth
1/4 tsp. Cayenne Pepper, or to taste
1/2 tsp. Oregano
1 ½ tsp. Cumin
1/4 tsp. Black Pepper
1/2 tsp. Salt
2 Cans White Kidney Beans, drained and rinsed
1 cooked rotisserie chicken, cut into bit size pieces
Heat a sauce pan with a cover over medium high heat.

Add the oil.

Then add the onion and sauté until almost brown 3-4 minutes.

Add the jalapeno and cook for 2 minutes.

Add the garlic and cook another minute.

Add the spices, cook for 1 minute and then add the broth.

Then add the beans and cut up chicken and simmer, covered, for about 5 more minutes.

Serve with tortilla chips, cheddar cheese, salsa, sour cream, avocado.

You can also serve this in a flour or corn tortilla.
