White Chip Macadamia Coconut Crisps
- 1 1/2 sticks softened butter
- 3/4 cup packed dark brown sugar
- 1/3 cup granulated sugar
- 1 large egg
- 1 tablespoon pure vanilla extract
- 1 2/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon baking powder
- 2 cups white chocolate chips
- 1 cup shredded coconut
- 3/4 cup chopped macadamia nuts
Preheat the oven to 325 degrees F.
Cream the butter and sugars on medium speed until fluffy. Add the egg and vanilla, and beat until smooth (the color should become lighter as it gets fluffier). Add the flour, soda, salt and baking powder, and mix until just combined. Add the chips, coconut and nuts until combined.
Drop on a parchment or Silpat-lined baking sheet in 325 degrees F oven (310 degrees F convection) for about 12-14 minutes until just slightly brown. The cookies will become crispier as they cool. For a chewier cookie, decrease the cooking time by about 2 minutes; crispier, increase by about 2 minutes.
