White Fruit Cake

RECIPE INGREDIENTS
5 large eggs
1/2 pound butter or margarine
1 cup sugar
1 3/4 cup all purpose flour
1/2 teaspoon baking powder
3/4# candied cherries
1# candied pineapple
4 cups  pecans
1/2 oz. bottle vanilla extract
1/2 oz. bottle lemon extract
Chop nuts and fruits into medium-size pieces.  Dredge with a small part of the flour. Cream butter and sugar until light and fluffy.  Add the well beaten eggs and blend well.  Sift remaining ingredients and baking powder together.  Fold into egg and butter mixture.  Add vanilla and lemon extracts; mix well; then add fruit and nuts, mixing in well.  Pour batter into greased, parchment paper-lined 10" tube pan.  Place in COLD oven.  Heat to 250 degrees.  Bake for 3 hours.
Cool in pan on cake rack

11x5x3 pan -  3 hours
