Yellow Split Pea Soup

Makes 8 cups (Serves 8)


  • 1 pound dried yellow split peas
  • 2 quarts water
  • 2 teaspoons dried thyme
  • 1 medium onion, chopped
  • 2 carrots, peeled and chopped
  • 2 leeks, trimmed and chopped
  • 2 stalks celery, chopped


Soak the split peas in water to cover overnight, then drain and rinse. Or simmer peas for 45 minutes in boiling water; drain.

Place the peas and the 2 quarts fresh water into a saucepan. Add the remaining ingredients and simmer until tender, approximately 1 1/2 to 2 hours. Stir occasionally.

Puree the soup in a food processor until smooth.

Serving size = 1 cup
