Yogurt, Oat Batter Bread

Makes 1 loaf (16 servings)
Make your own apple pie spice for this sweet batter bread by stirring together 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground allspice, and 1/8 teaspoon ground ginger.
- 2 cups all-purpose flour, divided
- 1/4 cup plus 2 tablespoons quick-cooking oats, divided
- 1 package active dry yeast
- 1 teaspoon apple pie spice
- 1/2 cup plain yogurt
- 1/4 cup packed brown sugar
- 1/3 cup water
- 1/4 cup butter
- 1/2 teaspoon salt
- 1 large egg
Preheat the oven to 375 degrees F. Lightly oil a 1 1/2-quart soufflé dish or casserole. Sprinkle with 1 tablespoon of the oats. In a large mixing bowl, stir together 1 cup flour, 1/4 cup oats, yeast and apple pie spice; set aside. In a medium saucepan over medium heat, stir together the yogurt, brown sugar, water, butter and salt. When the mixture is warm (about 125 degrees F) and butter is almost melted, add to the flour mixture. Add the egg and beat with an electric mixer on medium-low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in the remaining flour. (The batter will be sticky.) Spread the batter in the dish. Sprinkle with the remaining oats. Cover and let rise in a warm place till nearly doubled (about 30 to 40 minutes).
Bake until tester inserted near center comes out clean, about 40 minutes. Remove the bread from pan; cool on a wire rack.
