Yorkshire Pudding

Makes 8 servings


  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 3 large eggs
  • 1/4 cup of roast beef pan drippings or melted butter

Sift the flour and salt into a large bowl. Whisk the milk and eggs in another large bowl until smooth. Slowly add the egg mixture to the flour mixture and whisk until smooth. Cover and refrigerate until ready to use.

When ready to bake the pudding, preheat the oven to 450 degrees F. Add the pan drippings to 13 x 9 x 2-inch metal baking pan. Place the pan in the oven and heat for 10 minutes. Reduce the heat to 350 degrees F. Quickly pour the cold batter into the hot pan and bake until the pudding puffs and is golden brown on top, about 20 minutes. Serve immediately as it deflates quickly.
