- 2 tablespoons corn oil
- 4 corn tortillas, cut into 1/2-inch strips
- 2 finely chopped scallions (green onions), trim 2 inches off the tops
- 1 cup Jalisco Peppers (see recipe)
- 8 large eggs, beaten together
- 1/2 cup crumbled feta cheese (preferably Danish, which is less salty)
- Salsa, to taste

In a large skillet over medium heat, heat the corn oil. Add the
strips of corn tortillas and saute until limp, about 1 minute.
Add the scallions and Jalisco Peppers and cook for a minute just
