Yountville Scramble

The Diner is the best place for breakfast in Yountville, CA. Start the day with their renowned Yountville Scramble--scrambled eggs, feta cheese, sweet peppers and onions.


  • 2 tablespoons corn oil
  • 4 corn tortillas, cut into 1/2-inch strips
  • 2 finely chopped scallions (green onions), trim 2 inches off the tops
  • 1 cup Jalisco Peppers (see recipe)
  • 8 large eggs, beaten together
  • 1/2 cup crumbled feta cheese (preferably Danish, which is less salty)
  • Salsa, to taste

In a large skillet over medium heat, heat the corn oil. Add the

strips of corn tortillas and saute until limp, about 1 minute.

Add the scallions and Jalisco Peppers and cook for a minute just

to warm them up. Add the eggs and cook, stirring over low heat until the eggs are

softly scrambled.

Serve topped with feta cheese and salsa.
