The Diner is the best place for breakfast in Yountville, CA. Start the day with their renowned Yountville Scramble--scrambled eggs, feta cheese, sweet peppers and onions.
2 tablespoons corn oil
4 corn tortillas, cut into 1/2-inch strips
2 finely chopped scallions (green onions), trim 2-inches off the tops
1 cup Jalisco Peppers (see recipe)
8 large eggs, beaten together
1/2 cup crumbled feta cheese (preferably Danish, which is less salty)
salsa, to taste
Other necessary recipes:

In a large skillet over medium heat, heat the corn oil. Add the strips of corn tortillas and sauté until limp, about 1 minute.

Add the scallions and Jalisco peppers and cook for a minute just to warm them up. Add the eggs and cook, stirring over low heat until the eggs are softly scrambled.

Serve topped with feta cheese and salsa.
