Full flavour dish great for after church or for a potluck.
RECIPE INGREDIENTS
Simply Potatoes 1 package
Onions 1 cup chopped
Quinoa 1  cup cooked
Spinach 2 cups washed and chopped
White beans 1 can puree in food processor
1 cup chedder cheese (sharp works best)
1 egg
1 cup milk or cream
salt and pepper to taste
Toasted Almonds
DIRECTIONS
Cook onions in olive oil until soft then pour into a casserole dish. Layer Potatoes,Quinoa,Spinach. Mix together egg, white bean puree ,milk and cheese reserving a small amount of cheese for garnish.Add salt and pepper to taste.Pour over casserole. Bake at 350 for an hour. woops cover with foil. When done remove foil and sprinle on reserved cheese garnish. Let cool to warm and then top with Toasted almonds. Serve in squares or wedges with crusty bread.
